I would prefer you just call me (734-693-6326) and I can walk you through this but for posterity:
Call kitfox and request that you need a Bill of sale for the airplane with your serial number. This is going to be form 8050-2. . .see below. It is goign to require some legwork but what you want to do isn't going to work unless you catch someone in a lazy mood.
You are saying that you have all of the paperwork but I am pretty sure you don't know what all paperwork you need and I know it isn't possible you have it all as you can't have the critical paperwork unless you have a registration and if you had all of the paperwork you wouldn't be asking if you should be registering it as built from misc parts. Kitfox should have supplied the purchaser of the kit with a completed FAA 8050-2 form (Billl of sale). If you are not the original purchaser then you need conveyence from the original purchaser to the person you purchased it from (this would be the BOS from kitfox the original purchaser and then to the person you purchased it from and anyone in between) You then submit that with for 8050-1 which is the registration application to the oklahoma office and wait for a few of weeks. You don't need to waiting to get your special N number request verified and if you are worried just put a call in with the Oklahoma office to verify your is the only request in the system.
What concerns me is that if the aircraft hasn't ever been registered than it doesn't have an airworthiness certificate and that is the hard part. If you don't have that then you need to be more concerned about that.You need to be able to prove that you are the rightful owner of all of of the parts that went into it (Ie.if built from misc parts all major components need receipts or BOS) and that over 51% of the airplane was built by amateurs. This is done in the form of pictures and build logs. You can certainly get this done even if you don't have this info you just have to lie through your teeth. I am sure lots of people do this but it is a risky venture. If a person is not capable of completing simple paperwork and documentation as they spend thousands of hours and dollars building a flying machine you should have zero faith in the quality of there work.
EAA National publishes a step by step paperwork guide and is always available for phone calls. They are very knowledgeable and helpful with this kind of stuff. The Oklahoma FAA office is also very helpful when you have issues regarding registration. You do have to wait on hold for a while with them though.
